Hello, my name is Spencer Warren and I did a chef and cateringapprenticeship with Baxter Storey at Clyde and Co Last year.
I have two cousins that are chefs and I did my work experience in one of their restaurants at the age of 15. I knew I wanted to be a chef, so for the opportunity to do an apprenticeship with such a big company like Baxter Storey I had to grasp it with both hands.
On my apprenticeship I learnt many things and was able to work in every section of the kitchenpossible throughout the year, I also earned a bit of money whilst I was learning which paid for my travel to and from work.
After my apprenticeship I went on to work a few different sites where I gained many skills and friends. The main one was working at a pop up restaurant that Baxter Storey ran for Masterchef. I was able to get the feel of how a restaurant feels like as opposed tothe typical catering service set-up and learnedthe art of fine dining. After Masterchef I went on to work at Bupa Cromwell Hospital under the Head chef that ran Masterchef and learnedhow a hospital patient dining service is run and what sort of food is served.
Now I am working at The Honourable Society of Greys Inn, where I have worked for 3 weeks and learnt a lot. We cater for the lords and judges of London and in the summer I will be working on weddings and BBQ parties and gaining many more skills on top of those I learnedon my Apprenticeship and all the other Baxter Storey sites I’ve worked at.
